Gubana friulana
Il Friuli Venezia Giulia è una regione fantastica, talmente tanto legata alle tradizioni da avere perfino una sua lingua riconosciuta in tutta Italia e da avere delle ricette solo sue, la gubana è forse la più rappresentativa.
La Gubana è un dolce ricco e complesso nella preparazione, perfetto a fine di ogni pasto, ma ottima anche durante la giornata per il suo importante apporto calorico.
Per un menu tipicamente friulano ci sono gli antipasti immancabili a base di formaggi stagionati e affettati caserecci, un buon orzotto, realizzato come i risotti, ma con l'orzo, verdure e salsiccia, e per secondo il frico, una sorta di frittata di formaggi, ancor meglio se accompagnata con la cipolla.
A concludere un menu così ricco, la gubana. Dolce tipico, apprezzato da tutti gli amanti dei gusti pieni, corposi e densi. La sua variante più apprezzata è quella che la vede inumidita con una buona grappa rigorosamente friulana!
La preparazione è molto lunga e laboriosa, per la gubana che è un dolce tipico friulano delle Valli del Natisone, quasi impossibile da riprodurre se non si è davvero friulani DOC!
Il ripieno è ricco di gherigli di noce, uvetta, cioccolato fondente, canditi, prugne secche, pinoli, mandorle fichi e altre spezie, il tutto bagnato dalla buona grappa friulana. L'impasto che lo ricopre è denso e morbido, fatto con burro, uova e farina, la lavorazione è semplice, ma è molto difficile realizzare la forma della gubana stessa.
La cottura è di almeno 20 minuti che precedono le 24 ore di riposo prima della degustazione.
Di seguito gli ingredienti per preparare la vera Gubana Friulana:

800g di farina
120g di burro
150g di zucchero semolato
4 uova
30g di lievito di birra
1 limone

Per il ripieno
100g di gherigli di noce
150g di uvetta
75g di cioccolato fondente
70g di canditi
50g di prugne secche
50g di pinoli
50g di mandorle pelate
50g di fichi secchi
50g di zucchero semolato
50g di burro
3 uova
1 bicchiere e ½ di grappa
Spezie (noce moscata, cannella,…)
